A day at the bakery
- 4:30 a.m.
The ovens go on.
While the street is still asleep, the dough that rested overnight gets shaped by hand.
- 6:00 a.m.
First loaves out.
Crackly crusts, open crumb, and a smell that has been known to stop joggers mid-stride.
- 7:00 a.m.
Doors open.
Neighbours, regulars and at least one very polite dog. The croissants go first.
